Halloween Cupcakes - Oozing Brains Cupcakes

These yummy cupcakes are made even easier by using orange cake icing in a can. Orange brains are oozing on the cupcake outside and there is an added brain surprise on the inside. (In non-Halloween terms, we have a moist chocolate cupcake with a cheesecake-type filling.)

  • Cream Cheese - 8 oz. softened
  • 1 Egg
  • Sugar - 1/3 cup
  • Betty Crocker Chocolate Cake Mix
  • If desired, yellow and red food coloring
  • cupcake liners

  • Combine the sugar, cream cheese and egg to make the filling. If desired, add two drops of yellow food coloring and one drop of red food coloring to the filling to make it orange. Add more if you would like it to be bright orange.

Follow the instructions on the cake mix box and make the cake batter. Fill the cupcake liners halfway full, then add 1 to 1 1/2 teaspons of the cream cheese filling in the center of each of the cupcakes. Bake at 350 degrees for about 20 minutes.

When cool, add the oozing orange brains. I used Betty Crocker Decorating Cake Icing (Orange) in a can and used the drawing tip to create spaghetti-type frosting.
